  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter
  • 2 teaspoons pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by greasing it or lining it with paper liners.
  3. Mix dry ingredients in a bowl: flour, sugar, and pumpkin pie spice.
  4. Combine wet ingredients in another bowl: pumpkin puree, eggs, and melted butter.
  5. Combine the wet mixture into the dry ingredients, folding gently.
  6. Scoop the batter into muffin cups about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool the muffins in the pan for about 5 minutes before transferring to a wire rack.

Notes

Dust with powdered sugar or drizzle with glaze for serving. Works great with chocolate chips or nuts for variations.
