The Ultimate Creamy Avocado Egg Salad

A delightful Avocado Egg Salad that blends creamy avocados with hard-boiled eggs for a filling meal, enhanced by fresh ingredients and nostalgic flavors.

Ingredients

  • 2 ripe avocados
  • 4 hard-boiled eggs
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp pepper (adjust to taste)
  • 1 cup chopped celery
  • 1 tbsp Dijon mustard
  • Optional: Fresh herbs (dill or cilantro) for garnish

Instructions

  1. Hard-boil the eggs by placing them in a pot covered with cold water, bring to a boil, then simmer for 9-12 minutes.
  2. Cool and peel the eggs. Place them in ice-cold water for 5 minutes, then peel.
  3. Mash the avocados in a bowl until smooth but slightly chunky.
  4. Combine the chopped hard-boiled eggs with the mashed avocados, celery, lemon juice, Dijon mustard, salt, and pepper.
  5. Taste and adjust the seasoning to your liking.
  6. Chill the salad in the fridge for about 30 minutes to meld the flavors.

Notes
