Banana Bread Baked Oats

A cozy and delightful breakfast treat that combines banana bread with oatmeal for a hearty morning dish.

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a large mixing bowl until smooth, leaving a few lumps for texture.
  3. Pour in your chosen milk and sweetener, whisking until fully combined.
  4. Add the rolled oats, baking powder, cinnamon, and salt, gently folding together with a spatula.
  5. Mix in the chopped walnuts or chocolate chips if using.
  6. Grease an 8×8-inch baking dish with butter or cooking spray.
  7. Pour the mixture into the greased dish and spread it out evenly.
  8. Bake for 25-30 minutes until the top is golden brown and a toothpick comes out clean.
  9. Cool for about 10 minutes before slicing into squares.

Notes

Leftovers can be stored in the fridge for up to a week. Reheat in the microwave or oven.
