Wholesome and delicious Banana Oatmeal Bars are the perfect snack or energy-boosting breakfast to kickstart your day.

  • 1 1/2 cups rolled oats
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 2 ripe bananas (approx 1 cup mashed)
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking pan by lining it with parchment paper or greasing it lightly.
  3. Mix rolled oats, baking powder, cinnamon, and salt in a bowl.
  4. Mash the ripe bananas until smooth, leaving small chunks for texture.
  5. Combine the mashed bananas with peanut butter, maple syrup, and vanilla extract.
  6. Pour the wet mixture into the dry ingredients and mix until combined.
  7. Fold in the dark chocolate chips.
  8. Transfer the mixture to the prepared baking pan and flatten it down.
  9. Bake for 20-25 minutes until golden brown.
  10. Cool completely before slicing into bars.

Notes

These bars can be stored in an airtight container in the fridge for up to a week or frozen for up to three months.
