BBQ Chicken Salad

  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pork-free, alcohol-free barbecue sauce
  • 8 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup canned corn, drained
  • 1/2 cup diced red onion
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Season the chicken breasts with olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  2. Grill the Chicken: Cook the seasoned chicken on the grill for about 6-8 minutes on each side until the internal temperature reaches 165°F (75°C).
  3. Chop and Assemble the Salad: In a large bowl, combine chopped romaine lettuce, cherry tomatoes, drained corn, diced red onion, and shredded cheddar cheese.
  4. Toss in BBQ Sauce: Chop the grilled chicken into bite-sized pieces and add to the salad bowl. Pour the BBQ sauce over the salad and gently mix to combine.
  5. Serve and Enjoy! Plate the salad into serving bowls, adding extra BBQ sauce if desired, and top with additional cheese or fresh herbs.

Notes

You can prepare the salad ahead of time, but keep the dressing separate until ready to serve. Enjoy with crusty bread or tortilla chips.
