BBQ Chickpea Ranch Salad

A vibrant and wholesome salad packed with flavor, featuring chickpeas, mixed greens, and a smoky BBQ dressing.

  • 1 can chickpeas (drained and rinsed)
  • 2 cups mixed salad greens (e.g., romaine, spinach)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn (canned or frozen)
  • 1/2 red onion, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup BBQ sauce
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Optional toppings: Avocado slices, Feta cheese, Tortilla strips

Instructions

  1. Prepare the chickpeas by draining and rinsing if using canned, or soak and cook dried chickpeas if using those.
  2. Chop the veggies: dice cucumber and red onion, and halve cherry tomatoes.
  3. Combine chickpeas, salad greens, cucumber, red onion, cherry tomatoes, and corn in a large bowl.
  4. Add the BBQ sauce and ranch dressing, then toss everything together until well coated.
  5. Season with salt and pepper to taste, adjusting as necessary for flavor.
  6. Serve in a bowl or on plates, adding optional toppings as desired.

Notes

Keep the dressing on the side until serving to maintain the salad’s crunchiness.
