Pumpkin Layer Cake

A delightful pumpkin layer cake that captures the essence of fall with its warm spices and rich cream cheese frosting.

  • 3 cups all-purpose flour
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/2 cup oil
  • 2 teaspoons pumpkin pie spice
  • For Cream Cheese Frosting: 8 oz cream cheese, 1/2 cup softened butter, 4 cups powdered sugar, splash of vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your cake pans by greasing and flouring them, and lining the bottoms with parchment paper.
  3. Mix the dry ingredients in a bowl: whisk together flour, pumpkin pie spice, and a pinch of salt.
  4. Combine the wet ingredients in another bowl: beat eggs, sugar, and oil until smooth, then add pumpkin puree.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Divide the batter evenly into the prepared pans and bake for 25-30 minutes.
  7. Cool the cakes for about 10 minutes, then turn them onto a wire rack to cool completely.
  8. Make the cream cheese frosting by beating cream cheese, butter, and powdered sugar until creamy. Add vanilla extract.
  9. Assemble the cake: place one layer on a serving plate, spread frosting on top, place the second layer, and frost the top and sides.
  10. Chill the frosted cake for at least 30 minutes, then slice and serve.

Notes

For a twist, add chocolate chips or nuts to the batter, or consider making a gluten-free version with a 1:1 flour substitute.
