Deliciously Easy Berry Oat Bars

Chewy, comforting bars made with oats and fruity flavors, perfect for breakfast, snacks, or dessert.

  • ½ cup coconut oil (melted)
  • 1 ½ cups all-purpose flour
  • 1 ½ cups quick oats
  • ⅓ cup maple syrup
  • ⅓ cup coconut sugar (or granulated sugar)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup raspberry preserves

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking dish with parchment paper.
  3. Combine the flour, quick oats, coconut sugar, baking powder, and salt in a bowl.
  4. Mix the melted coconut oil and maple syrup in another bowl.
  5. Combine the wet and dry mixtures until no dry flour remains.
  6. Spread half of the batter into the lined baking dish.
  7. Add the raspberry preserves on top of the batter.
  8. Top with the remaining batter.
  9. Bake for about 30-35 minutes until golden brown.
  10. Cool completely before slicing into squares.

Notes

These bars can be customized with different flavors of preserves or additional ingredients like nuts and chocolate chips.
