Black Bean Crunch Wrap Supreme

A deliciously cozy meal wrapped in a crispy tortilla, filled with seasoned black beans, rice, cheese, and fresh toppings.

  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup corn (canned or frozen)
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • 1/2 avocado, sliced
  • 1/4 cup sour cream
  • 4 large flour tortillas
  • Taco seasoning to taste
  • Oil for cooking

Instructions

  1. Prep Your Filling: In a bowl, mix the rinsed black beans, cooked rice, corn, and taco seasoning. Gently stir to blend the flavors.
  2. Add the shredded cheese into your bean mixture and stir until combined.
  3. Warm Tortillas: Warm the flour tortillas on a hot skillet or in the microwave for easier folding.
  4. Assemble Time: Lay a tortilla flat, add the bean mixture, lettuce, tomato, avocado, and sour cream.
  5. Fold It Up: Fold the sides of the tortilla toward the center and roll it up, tucking the sides in.
  6. Cook to Perfection: Heat a skillet, add oil, and cook the crunch wrap seam-side down for 3-4 minutes on each side.
  7. Slice and Serve: Remove from the skillet, let sit for a minute, then slice in half to reveal the filling.
