Blueberry Oat Crumble Bars

Delicious and comforting Blueberry Oat Crumble Bars perfect for coffee mornings or as an afternoon treat.

  • 1 cup almond flour
  • 1 ½ cups rolled oats
  • 1 tsp baking powder
  • ½ cup maple syrup
  • ¼ cup coconut oil
  • ½ tsp vanilla extract
  • Dash of salt
  • 2 cups blueberries (frozen or fresh)
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • ⅓ cup coconut sugar
  • ½ tsp vanilla extract
  • 3 tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish with coconut oil or line with parchment paper.
  3. Mix the almond flour, oats, baking powder, and salt in a large bowl.
  4. Add the maple syrup, melted coconut oil, and vanilla extract. Squeeze in lemon juice and mix until crumbly.
  5. Set aside 1 cup of the mixture for topping.
  6. Prepare the filling by tossing blueberries with lemon zest, lemon juice, cornstarch, coconut sugar, and vanilla.
  7. Assemble the bars by pressing the oat mixture into the baking dish, followed by the blueberry filling and the reserved topping.
  8. Bake for 25-30 minutes until the top is golden brown and filling is bubbling.
  9. Cool in the dish for 10-15 minutes before transferring to a wire rack.
  10. Slice into squares or rectangles and serve.

Notes

These bars can be served with yogurt or ice cream. Try different berries or nuts for variations.
