Blueberry Oatmeal Bars

Delicious and wholesome Blueberry Oatmeal Bars made with oats, ripe bananas, and juicy blueberries, perfect for breakfast, snacks, or light desserts.

  • 2 cups rolled oats
  • 1 cup mashed ripe bananas (or applesauce)
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup almond or peanut butter (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish by lining it with parchment paper or greasing it lightly.
  3. Mix the dry ingredients in a large bowl: rolled oats, cinnamon, and salt until well combined.
  4. Mix the wet ingredients in another bowl: mash bananas (or applesauce), then stir in honey (or maple syrup), vanilla extract, and nut butter (if using) until creamy.
  5. Combine the wet mixture into the dry ingredients until just mixed, avoiding overmixing.
  6. Fold in the blueberries gently into the batter.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake in the preheated oven for 25–30 minutes until golden and a toothpick inserted comes out clean.
  9. Cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely, then slice into bars.

Notes

For added nutrition, consider sprinkling chia or flax seeds. They also freeze well for up to three months!
