Broccoli Cheddar Biscuit Pot Pie

A warm and comforting pot pie filled with vibrant broccoli and creamy cheddar, topped with flaky biscuits.

  • 2 cups Broccoli, chopped (fresh or frozen)
  • 1 can (10.5 oz) Cheddar Soup
  • 1 can Biscuits (refrigerated or homemade)
  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste
  • Optional: Dried thyme or parsley, for flavor

Instructions

  1. Prep your veggies: Wash and chop your broccoli into bite-sized pieces.
  2. Sauté the onion and garlic: In a skillet, heat the olive oil over medium heat and sauté the onion until translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.
  3. Add the broccoli: Toss in the chopped broccoli and stir for a few minutes until slightly tender.
  4. Stir in the cheddar soup: Pour in the cheddar soup and mix well. Season with salt, pepper, and optional herbs.
  5. Transfer to baking dish: Preheat your oven to 400°F (200°C) and pour the mixture into a greased baking dish.
  6. Top with biscuits: Flatten each biscuit slightly and place them over the filling.
  7. Bake: Bake for about 20-25 minutes until the biscuits are golden brown and the filling is bubbly.
  8. Cool and serve: Allow to cool for 5-10 minutes before serving.
