  • 1/2 cup vegan mayo
  • 1/4 cup buffalo hot sauce
  • 1/2 teaspoon garlic powder
  • 45 ounces canned chickpeas (3 cans; drained and rinsed, about 4 cups)
  • 2 sticks celery (cut in half and thinly sliced)
  • 1/4 red onion (fine dice)
  • 1 carrot (shredded)
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh cilantro
  • 1 cup fresh or frozen corn kernels (optional)
  • 1 cup finely diced cucumber (optional)
  • Toasted bread, lettuce, crackers, or veggie sticks for serving (optional)

Instructions

  1. Prepare the chickpeas by combining the drained and rinsed chickpeas in a large bowl. Gently mash some for texture.
  2. Make the dressing by whisking together vegan mayo, buffalo hot sauce, and garlic powder in a separate bowl.
  3. Chop the celery, red onion, and carrot, then add them to the chickpeas along with any optional corn and cucumber.
  4. Combine the dressing with the chickpea mixture, tossing gently to ensure even coating.
  5. Add the fresh dill and cilantro, tossing again to incorporate.
  6. Let the salad chill in the fridge for about 30 minutes for best flavor, or serve immediately.
