Café Style Veg Mayo Sandwich

A flavorful and nostalgic sandwich packed with fresh veggies, creamy mayo, and buttered bread for a delightful comfort food experience.

  • 23 tbsp Butter
  • 1 Onion
  • 1 Tomato
  • 1 Capsicum (Bell Pepper)
  • 1 cup Sweet Corn
  • 1 medium Grated Carrot
  • 100g Paneer (grated)
  • 2 Green Chilies (finely chopped)
  • 23 tbsp Veg Mayo
  • 1/2 tsp Chili Flakes
  • 1/2 tsp Oregano
  • 1/2 tsp Salt
  • Bread Slices

Instructions

  1. Heat the Butter: Melt the butter in a frying pan over medium heat until bubbly and beginning to brown.
  2. Add the Veggies: Sauté onions until golden, then add tomatoes and capsicum, cooking until softened.
  3. Combine the Veggies: In a bowl, mix sautéed veggies with sweet corn, grated carrot, grated paneer, and green chilies.
  4. Add Mayo & Spices: Mix in veg mayo, chili flakes, oregano, and salt; adjust seasoning to taste.
  5. Prepare the Bread: Spread butter on one side of each bread slice for a crispy crust.
  6. Layer the Filling: Place veggie filling on unbuttered side of one slice, top with another slice, buttered side out.
  7. Heat the Pan: Grill the sandwich in a frying pan over medium-low heat, pressing slightly with a spatula.
  8. Flip & Cook: Grill until golden and crispy, flipping to cook both sides evenly.
  9. Cut in Half: Slice the sandwich and let it rest for a minute before serving.
  10. Serve with Love: Enjoy with chips or a salad and extra mayo for dipping.
