Cajun Burrata Potatoes

A delicious blend of creamy burrata and Cajun flavors served over crispy roasted potatoes.

  • 2 lbs Potatoes (golden or red)
  • 8 oz Burrata
  • 1 lb Cajun Chicken
  • 3 tbsp Olive Oil
  • 2 tbsp Cajun Spice Blend
  • Fresh Herbs (parsley or green onions, for garnish)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and dry them. Cut them into halves or quarters.
  3. Drizzle the potatoes with olive oil, and sprinkle with salt, pepper, and 1 tablespoon of Cajun spice blend. Toss to coat.
  4. Arrange the potatoes in a single layer on a baking sheet and roast for 30-35 minutes, tossing halfway through.
  5. In a skillet over medium-high heat, add olive oil and cook the Cajun chicken, seasoned with remaining Cajun spices, for about 5-7 minutes on each side.
  6. Layer a scoop of roasted potatoes on a plate, top with slices of Cajun chicken, and burrata.
  7. Tear the burrata and let it ooze over the warm potatoes and chicken. Garnish with fresh herbs.

Notes

For a vegetarian version, consider grilled vegetables or chickpeas. Serve family-style for a rustic presentation.
