Caprese Rice Pie

A comforting and satisfying dish combining creamy mozzarella, juicy tomatoes, and fragrant basil wrapped in a simple rice crust, perfect for any gathering.

Ingredients

  • Cooked Rice (about 2 cups)
  • Fresh Tomatoes (about 2-3 medium-sized, preferably heirloom)
  • Mozzarella Cheese (8 oz, fresh or shredded)
  • Fresh Basil (about 1/2 cup, chopped)
  • Eggs (2, lightly beaten)
  • Olive Oil (2 tablespoons)
  • Salt & Pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine cooked rice and a tablespoon of olive oil in a mixing bowl.
  3. Grease a 9-inch pie dish with more olive oil or cooking spray and press the rice mixture to form a crust.
  4. Bake the crust in the oven for about 10 minutes.
  5. Chop tomatoes into bite-sized pieces and mix with chopped basil, salt, and pepper.
  6. Layer half of the tomato mixture on the crust, followed by half of the mozzarella. Repeat the layers.
  7. Beat the eggs and pour over the filling.
  8. Bake for 30-35 minutes until the cheese is bubbly and golden.
  9. Cool for a few minutes before slicing and serving warm.

Notes

Serve with balsamic reduction or parmesan, and accompany with a green salad and crusty bread. Can be made ahead and reheated.
