Delicious no-bake energy balls inspired by carrot cake flavors, packed with wholesome ingredients.

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon

  • Pinch of salt
  • 1 tsp vanilla extract
  • Extra 1/2 cup shredded coconut for rolling

Instructions

  1. Prep your ingredients by chopping medjool dates into smaller pieces and shredding carrots if not pre-shredded.
  2. Blend the dates, walnuts, carrots, chia seeds, shredded coconut, spices, salt, and vanilla in a food processor until sticky and cohesive.
  3. Taste test the mixture for sweetness and adjust if necessary.
  4. Roll the mixture into bite-sized balls, wetting hands if needed to prevent sticking.
  5. Coat the balls in extra shredded coconut for a delightful finish.
  6. Chill the energy balls in the refrigerator for about 30 minutes to allow flavors to meld.
