Chicken Bacon Ranch Pasta

  • 1 lb chicken breast, diced
  • 6 slices bacon, chopped
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes, halved

  • Chopped green onions for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
  3. Sauté the Chicken: In the same skillet, add the diced chicken, season with salt and pepper, and cook for 5-7 minutes until golden brown.
  4. Add the Dressing and Combine: Reduce heat to low, stir in ranch dressing, and add reserved pasta water if needed to create a creamy sauce.
  5. Mix in Pasta and Bacon: Fold in the cooked pasta and crispy bacon until well coated with ranch dressing.
  6. Finish with Cheese and Tomatoes: Sprinkle in shredded cheddar cheese and halved cherry tomatoes, stirring until cheese melts.
  7. Taste and Adjust: Check seasoning and adjust with salt and pepper as needed.
  8. Plate It Up: Serve warm, garnished with chopped green onions.

Notes

For a spicy twist, add red pepper flakes or diced jalapeños. Substitute ranch dressing with homemade alternatives if desired.
