Sizzling Chicken Kofta with Garlic Yogurt Sauce

  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup plain yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • Pinch of salt
  • 2 tablespoons olive oil

Instructions

  1. Prepare Your Mixing Bowl: Grab a large mixing bowl and toss in your ground chicken, onion, garlic, parsley, cumin, coriander, salt, and black pepper. Use your hands to gently mix everything together. (Tip: Wet your hands slightly before mixing to prevent the chicken from sticking!)
  2. Form the Kofta: Once everything is combined, take a generous handful of the mixture and form it into oval or cylindrical shapes—whatever feels right! They should be about the size of a small sausage. (Chef’s hack: If the mixture feels too sticky, add a small amount of breadcrumbs to help bind them better!)
  3. Chill It Out: For the best texture, place the formed kofta in the refrigerator for about 30 minutes. This helps them hold their shape during cooking.
  4. Cook the Kofta: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the kofta in batches, making sure not to overcrowd the pan. Cook for about 6-8 minutes, turning occasionally, until they’re golden and cooked through. (Don’t rush this step; a good sear gives wonderful flavor!)
  5. Whip Up the Garlic Yogurt Sauce: In a small bowl, combine the plain yogurt, lemon juice, and a pinch of salt. Mix well until smooth and creamy. This sauce will cool down the spiciness of the kofta and add a lovely tang.
