Chicken Lo Mein

A comforting and flavorful Chicken Lo Mein recipe, perfect for a cozy dinner or gathering with friends.

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Boil the Noodles: Start by bringing a large pot of water to boil. Cook dried Lo Mein noodles according to package instructions until al dente, or fresh noodles for 2-3 minutes.
  2. Rinse and Drain: Drain the noodles in a colander and rinse under cold water to prevent sticking.
  3. Slice the Chicken: While the noodles cook, slice chicken breasts into thin pieces.
  4. Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
  5. Cook the Chicken: Add sliced chicken to the hot pan in a single layer. Cook without stirring for the first 2 minutes, then stir and cook for another 3-4 minutes.
  6. Add the Veggies: Toss in sliced carrots, red and yellow bell peppers, and minced garlic. Stir-fry for about 3-4 minutes until crisp-tender.
  7. Add the Noodles: Add cooked noodles to the skillet and toss gently with tongs to combine.
  8. Pour in the Sauce: Drizzle soy sauce over the noodles and toss to combine, cooking for an additional 2 minutes.
  9. Garnish and Serve: Toss in chopped green onions just before serving and enjoy warm!

Notes

For added flavor, drizzle some sesame oil on the drained noodles. You can also experiment with different proteins or vegetables to customize the dish.
