Cozy Chickpea Salad

A vibrant and refreshing chickpea salad that combines wholesome ingredients for a delightful meal perfect for any occasion.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and drain chickpeas.
  2. Prep your veggies.
  3. Combine ingredients in a mixing bowl.
  4. Dress it up with olive oil and lemon juice.
