Instructions

  1. Prep your ingredients: Start by gathering all your ingredients together. Rinse your chickpeas under cold water and let them drain well.
  2. Chop the veggies: Dice your cucumber, bell pepper, and red onion into bite-sized pieces. Halve your cherry tomatoes.
  3. Make the dressing: In a small bowl, combine tahini, lemon juice, minced garlic, salt, and pepper. Whisk together until smooth.
  4. Combine the ingredients: In a large mixing bowl, add the chickpeas, cucumbers, bell pepper, cherry tomatoes, red onion, and parsley. Pour the tahini dressing over everything.
