  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the ingredients: Dice the cucumber, tomatoes, and avocado into bite-sized pieces.
  2. Rinse the chickpeas: Drain and rinse under cold water.
  3. Combine the veggies and chickpeas in a large bowl.
  4. Prepare the dressing: Whisk together the olive oil, lemon juice, salt, and pepper.
  5. Dress the salad: Drizzle the dressing over the salad and gently toss to combine.
  6. Taste and adjust seasoning as needed.

Notes

Best enjoyed fresh. Add avocado right before serving to keep it green.
