Chickpea Tomato Basil Salad

A refreshing salad celebrating bright flavors with chickpeas, tomatoes, and fresh basil.

Ingredients

  • 400g / 1 can chickpeas, drained and rinsed
  • 500g / 2 cups diced tomatoes
  • 30g / 1 cup chopped fresh basil
  • 50g / 1/4 cup finely diced red onion
  • 30ml / 2 tablespoons extra virgin olive oil
  • 15ml / 1 tablespoon freshly squeezed lemon juice
  • 2 cloves minced garlic
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Wash and prepare your ingredients—drain and rinse chickpeas, dice tomatoes, and chop basil and onion.
  2. Mix the Chickpeas and Tomatoes: In a large bowl, combine the chickpeas and diced tomatoes, folding gently.
  3. Add Garlic and Onion: Toss in minced garlic and diced red onion, allowing the flavors to meld.
  4. Dress it Up: Drizzle with olive oil and lemon juice, and toss gently to combine.
  5. Season with Love: Sprinkle salt and pepper to taste, adjusting flavors as needed.
  6. Throw in the Basil: Fold in the chopped basil, enhancing the aroma of your salad.
  7. Let it Marinate: Allow the salad to sit for 15-30 minutes before serving to let the flavors blend.

Notes

This salad can be served immediately or tastes even better after sitting in the fridge for a bit.
