Clean Eating Quinoa & Veggie Bowl

A vibrant and nourishing quinoa bowl loaded with colorful veggies for a satisfying meatless meal.

  • 1 cup quinoa (uncooked)
  • 1 can chickpeas (drained and rinsed)
  • 2 cups spinach (fresh)
  • 1 can black beans (drained and rinsed)
  • 1 cup bell peppers (diced)
  • 1 medium zucchini (diced)
  • 1 cup carrots (shredded)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic (minced)
  • Herbs and spices (basil, cumin, paprika)

Instructions

  1. Rinse the quinoa under cold water in a fine-mesh strainer. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and let simmer for about 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds. Toss in bell peppers, shredded carrots, and zucchini. Cook until tender, about 5-7 minutes.
  3. Add spinach and stir until wilted, about 2 minutes.
  4. Stir in chickpeas and black beans until heated through, about 3 minutes.
  5. Fluff the cooked quinoa and fold it into the skillet with the veggies. Mix well for about 2 more minutes.
  6. Drizzle lemon juice over the mixture and stir again to combine.

Notes

This bowl is versatile and can be garnished with fresh herbs, feta cheese, or avocado. Feel free to experiment with different veggies!
