  • 1 can coconut milk
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 cups cooked rice
  • 1 tbsp vegetable oil (or coconut oil)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish

Instructions

  1. Prep the ingredients by gathering all items and chopping garlic and ginger.
  2. Heat the oil in a skillet over medium heat.
  3. Season the chicken with salt and pepper, then cook until golden brown.
  4. Remove the chicken from the skillet and sauté garlic and ginger.
  5. Add coconut milk and soy sauce, simmering for 5 minutes.
  6. Slice the chicken, return to the skillet, and coat with sauce.
  7. Squeeze in lime juice, stir, and adjust consistency if needed.
