Brownie Cupcakes with Cookie Dough Frosting

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chocolate chips
  • For the Cookie Dough Frosting:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup milk
  • Mini chocolate chips for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a muffin tin with cupcake liners or grease each cup.
  3. Mix the flour, cocoa powder, salt, and baking powder in a medium bowl.
  4. Create the brownie batter by combining melted butter, granulated sugar, and brown sugar in a large mixing bowl. Add eggs and vanilla, then mix in dry ingredients.
  5. Fill the muffin tin with brownie batter, filling each liner about 2/3 full.
  6. Bake for 18-20 minutes until tops are set and a toothpick comes out with moist crumbs.
  7. Cool the cupcakes in the tin for 5-10 minutes before transferring to a wire rack.
  8. Whip up the cookie dough frosting by beating softened butter, sugars, and vanilla until creamy. Add flour and salt, then drizzle in milk.
  9. Frost the cooled brownies generously with the cookie dough frosting and top with mini chocolate chips if desired.

Notes

For a lighter version, consider using applesauce in place of some of the butter. These cupcakes can also be frozen for 2-3 months.
