Comforting Crack Chicken Pasta

A creamy, flavorful pasta dish made with rotisserie chicken, cream cheese, and ranch seasoning, topped with crispy bacon and fresh green onions.

  • 8 ounces pasta (penne or fusilli)
  • 1 pound chicken breast, cooked and shredded
  • 1 packet ranch seasoning mix
  • 1 cup cream cheese, softened
  • 1/2 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup bacon, cooked and crumbled
  • 1 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, and add your pasta. Cook according to package instructions until al dente. Drain and set aside.
  2. Prepare the Chicken: If you haven’t cooked your chicken yet, grill, boil, or sauté until fully cooked, then shred into bite-sized pieces.
  3. Make the Sauce: In a large skillet over medium heat, add softened cream cheese and chicken broth. Stir continuously until creamy and combined.
  4. Add the Flavor: Stir in ranch seasoning mix, then add shredded chicken and half of the cheddar cheese. Continue stirring until well mixed and bubbling.
  5. Combine with Pasta: Add the drained pasta to the skillet, mixing until well coated. If too thick, add reserved pasta water to loosen.
  6. Final Touches: Remove from heat, sprinkle in crispy bacon and remaining cheddar cheese, and toss gently to combine.
  7. Garnish: Serve in individual bowls, topped with chopped green onions.

Notes

You can replace chicken with shredded turkey or tofu for a vegetarian option, and try using whole wheat or chickpea pasta for a healthier twist.
