Comforting Potato Noodles

A heartwarming recipe for homemade potato noodles, perfect for family dinners or comforting meals.

Ingredients

  • 2 medium potatoes (Russets or Yukon Golds)
  • 1 cup all-purpose flour (or almond and tapioca flour for gluten-free)
  • 1 egg (optional for richness)
  • Salt to taste
  • Olive oil or butter for serving
  • Your choice of toppings (cheese, fresh herbs, sauce)

Instructions

  1. Prepare the potatoes by peeling and cutting them into smaller pieces. Cook in salted water until fork-tender, about 15-20 minutes.
  2. Mash the cooked potatoes until smooth, preferably using a potato ricer.
  3. Make the dough by combining mashed potatoes with flour and the egg (if using). Mix until a dough forms.
  4. Knead the dough gently on a floured surface for 2-3 minutes until smooth and elastic.
  5. Roll out the dough into a thin sheet, about 1/8 inch thick, and keep covered to prevent drying.
  6. Cut the noodles into desired shapes using a knife or pasta cutter.
  7. Cook the noodles in boiling salted water for 2-4 minutes until they float.
  8. Drain the noodles and toss with olive oil or butter before serving.

Notes

These potato noodles can be customized with various toppings and flavors. Serve with sautéed garlic and greens or a sprinkle of cheese.
