  • 1 lb Steak (Sirloin or Ribeye)
  • Salt and Black Pepper
  • Garlic Powder
  • Smoked Paprika
  • 2 tbsp Olive Oil
  • 4 tbsp Butter
  • 5 Cloves Garlic, Minced
  • 1 cup Heavy Cream
  • 3/4 cup Whole Milk
  • 1 1/4 cups Parmesan, Shredded or Freshly Grated
  • Parsley, Chopped (optional)
  • Red Pepper Flakes (optional)
  • Cracked Black Pepper (optional garnish)

Instructions

  1. Cook Tortellini: Bring a large pot of salted water to a boil. Once bubbling, toss in your cheese tortellini and cook according to package instructions (typically about 3-5 minutes). Drain and set aside, but reserve a little pasta water.
  2. Sear the Steak: Season your steak with salt, black pepper, garlic powder, and smoked paprika. Heat the olive oil in a skillet over medium-high heat. Add the steak and sear it for about 4 minutes on each side for medium-rare.
  3. Rest the Steak: Transfer the steak to a cutting board and let it rest for 5-10 minutes. Slice it thin against the grain.
  4. Create the Sauce Magic: In the same skillet, reduce heat to medium, add the butter and minced garlic. Sauté for 1-2 minutes until fragrant.
  5. Incorporate Cream and Milk: Pour in the heavy cream and whole milk, stirring to combine. Allow it to simmer for 3-5 minutes until slightly thickened.
  6. Add Parmesan: Grate in the Parmesan cheese while stirring. Add reserved pasta water if the sauce is too thick.
  7. Combine Everything: Toss the cooked tortellini in the cream sauce, adding the sliced steak. Adjust seasoning if necessary.
  8. Plate It Up: Serve in bowls, garnish with parsley, red pepper flakes, and black pepper.
