Creamy Avocado Pasta

A delightful and simple creamy avocado pasta that captures the warmth of home cooking.

  • 8 oz penne pasta
  • 2 cups water
  • Salt (to taste)
  • 1 large ripe avocado
  • 2 garlic cloves
  • 1 cup baby spinach
  • 1 green chili (optional)
  • Crushed black pepper (to taste)
  • 1 teaspoon olive oil (optional)
  • 1 tablespoon lemon juice
  • 1/4 cup water (or as needed)
  • Red chili flakes (for garnish)

Instructions

  1. Cook the pasta: In a large pot, bring your 2 cups of water to a boil, adding a generous pinch of salt. Once boiling, pour in the 8 oz of penne pasta. Stir occasionally, ensuring it doesn’t stick. Check the package for cooking times—usually about 8-10 minutes for penne—until al dente.
  2. Prepare the avocado sauce: While the pasta is cooking, cut the large ripe avocado in half and remove the pit. Scoop out the flesh into a blender or food processor. Add 2 garlic cloves, 1 cup of baby spinach, and 1 tablespoon of lemon juice. Add the green chili if desired.
  3. Blend it up: Pulse the mixture on high until smooth, slowly blending in 1/4 cup of water. Taste and adjust with more salt and crushed black pepper.
  4. Combine pasta and sauce: Once the pasta is cooked to your liking, drain it but remember to save some pasta water! Return the pasta to the pot and pour over the creamy avocado sauce while the pasta is still hot.
  5. Serve and enjoy: Plate the pasta with an extra drizzle of olive oil, a sprinkle of red chili flakes, and garnish with fresh spinach if desired.

Notes

Serve with grilled chicken or shrimp for added protein. Adjust seasoning to taste.
