Creamy Caramel Swirl Cheesecake Cups

Delightful individual cheesecake cups swirled with caramel and set on a graham cracker crust.

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 6 tablespoons unsalted butter
  • 16 oz cream cheese
  • 0.5 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 0.5 cups sour cream
  • 0.5 cups heavy cream
  • 0.5 cups caramel sauce
  • To taste sea salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix the graham cracker crumbs, granulated sugar, and melted butter until blended.
  3. Press the mixture down into cupcake liners in a cupcake pan.
  4. Bake for 8-10 minutes until golden.
  5. Beat the cream cheese until smooth and creamy.
  6. Add the powdered sugar and vanilla and beat until combined.
  7. Incorporate the eggs, one at a time.
  8. Mix in the sour cream and heavy cream until smooth.
  9. Fill each crust with cheesecake filling and drizzle with caramel.
  10. Swirl the caramel into the filling.
  11. Bake for 20-25 minutes until set around the edges.
  12. Cool at room temperature for 30 minutes and then chill in the fridge for 2-3 hours.

Notes

Drizzle with more caramel and top with whipped cream or sea salt for enhanced flavor.
