  • ½ cup Creamy Mayo Dressing (or Greek yogurt)
  • 4 slices Soft Bread (brioche, whole grain, or sourdough)
  • 1 small Cucumber (optional, thinly sliced)
  • ½ cup Sweet Corn (optional, fresh, frozen, or canned)
  • 1 cup Lettuce (optional, romaine or baby spinach)

Instructions

  1. Prepare the chicken by shredding it into bite-sized pieces.
  2. Make the dressing by combining mayonnaise, lemon juice, salt, and pepper in a bowl.
  3. Mix the shredded chicken into the dressing, adding cucumbers and corn if desired.
  4. Slice your chosen bread using a serrated knife.
  5. Assemble by spreading the creamy chicken mixture on one slice of bread and layering on lettuce and other veggies.
