  • Salt, to taste
  • Black pepper, to taste
  • 2 teaspoons garlic powder, divided
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil, divided
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning

Instructions

  1. Prep the chicken: Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides with salt, pepper, and 1 teaspoon of garlic powder.
  2. Sear the chicken: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts to the pan and sear each side for about 5-6 minutes until golden brown, then transfer to a plate.
  3. Sauté the garlic: In the same skillet, add another tablespoon of olive oil. Toss in the minced garlic and remaining teaspoon of garlic powder. Sauté for 30 seconds.
  4. Build the sauce: Pour in the chicken broth, scraping the bottom to get the tasty bits, and let it simmer for about 3 minutes.
  5. Cream it up: Lower the heat and stir in the heavy cream, Parmesan cheese, Dijon mustard, and Italian seasoning, stirring until well combined.
  6. Return the chicken: Nestle the chicken breasts back in the sauce, coating them well, and let everything simmer for another 5-7 minutes until thickened.
  7. Garnish & final touches: Sprinkle with fresh herbs if desired.
