Creamy Gnocchi with Spinach and Feta

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Boil the Gnocchi: In a large pot, bring salted water to a boil over high heat. Once boiling, gently add in the gnocchi. Cook according to package instructions (typically about 2-3 minutes). When they float to the surface, they’re ready! Reserve a bit of the gnocchi water before draining.
  2. Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Once shimmering, add the minced garlic and sauté for about 1 minute, until fragrant and golden brown.
  3. Add the Spinach: Toss in the fresh spinach, stirring to coat it with the garlic oil. Cook for about 2-3 minutes until the spinach wilts down.
  4. Stir in the Cream: Lower the heat and pour in the heavy cream, stirring to combine it with the spinach and garlic. Let it simmer for about 2 minutes to thicken.
  5. Add Feta and Season: Crumble the feta cheese into the pan, mixing it gently into the sauce. Season with salt and pepper to taste, adding a splash of reserved gnocchi water if needed.
  6. Combine the Gnocchi: Add the cooked gnocchi back into the skillet, gently tossing them with the creamy sauce until well-coated. Let them cook together for an extra minute.

Notes

Garnish with freshly grated Parmesan cheese and a sprinkle of black pepper before serving. Feel free to adjust seasoning to your preference.
