Creamy Herb Chicken with Mashed Potatoes and Honey Glazed Carrots

  • 1 cup Heavy Cream
  • 1 tablespoon Fresh Herbs (thyme, rosemary, parsley)
  • 2 cups Potatoes (peeled and diced)
  • 1/2 cup Milk
  • 2 tablespoons Butter
  • 4 Carrots (sliced)
  • 2 tablespoons Honey
  • Salt and Pepper to taste

Instructions

  1. Prepare the Ingredients: Gather all your ingredients, peel and dice the potatoes, slice the carrots, and wash your herbs.
  2. Boil the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until fork-tender, about 15-20 minutes.
  3. Cook the Chicken: In a large skillet, heat oil over medium heat. Season chicken thighs with salt and pepper, then add them to the skillet skin-side down. Cook for about 7-8 minutes, then flip and cook for another 5-7 minutes.
  4. Make the Creamy Sauce: Remove the chicken from the skillet, add heavy cream and fresh herbs, stir, and let it simmer until thickened. Return the chicken to the skillet.
  5. Mash the Potatoes: Drain the cooked potatoes, return them to the pot, add butter and milk, then mash to your desired creaminess.
  6. Glaze the Carrots: In a separate saucepan, combine sliced carrots, honey, and a splash of water. Let them simmer for 5-7 minutes until tender.
  7. Plate Your Masterpiece: Serve mashed potatoes topped with chicken and sauce, alongside honey glazed carrots.

Notes

For a lighter dish, substitute heavy cream with half-and-half or whole milk. Adjust cooking times for chicken breasts, if used.
