Creamy Spinach Pasta

A comforting and creamy pasta dish featuring fresh spinach and gooey mozzarella, perfect for cozy evenings.

  • 4 cups Fresh Spinach (Palak)
  • 2 cups Milk
  • 2 tablespoons Wheat Flour
  • 1 cup Mozzarella Cheese, grated
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • Pasta of your choice

Instructions

  1. Make the Spinach Puree: Wash the spinach, boil for 2-3 minutes, drain, and blend with a splash of water until smooth.
  2. Cook the Pasta: Boil salted water, add pasta, and cook until al dente. Reserve a cup of pasta water before draining.
  3. Sauté the Aromatics: Heat olive oil, sauté onion until translucent, add garlic, and cook for 1 minute.
  4. Make the Creamy Sauce: Sprinkle flour over aromatics, stir and cook for 1-2 minutes. Gradually whisk in milk and simmer until thickened.
  5. Incorporate the Spinach: Stir in the spinach puree, add salt and pepper, and adjust consistency with reserved pasta water if needed.
  6. Cheesy Goodness: Add mozzarella cheese and let it melt into the sauce.
  7. Combine Pasta and Sauce: Toss in cooked pasta and ensure it’s well coated with the sauce.
  8. Taste and Adjust: Season to taste with salt and pepper.
  9. Serve Hot: Dish out the pasta, garnish with extra mozzarella if desired, and enjoy!

Notes

For an extra kick, add red pepper flakes. This dish can also be made ahead by preparing the sauce in advance.
