Zucchini Bacon Ranch Quesadillas

A delicious twist on the classic quesadilla, featuring crispy bacon, fresh zucchini, and melty cheese, all seasoned to perfection with ranch flavor.

  • 2 small Zucchini, sliced into thin rounds
  • 4 strips Bacon, chopped
  • 1 tablespoon Ranch Seasoning
  • 4 Flour Tortillas
  • 1 cup Cheddar Cheese, shredded

Instructions

  1. Prep your ingredients by washing and slicing the zucchini, and chopping the bacon.
  2. Cook the bacon in a skillet over medium heat for 6–8 minutes until crispy, then transfer to paper towels.
  3. Sauté the zucchini in the same skillet for 3–5 minutes until tender, seasoning with salt and pepper.
  4. Assemble the quesadillas by layering ranch seasoning, zucchini, bacon, and cheese on one half of the tortilla, then fold over.
  5. Cook the quesadillas in the skillet for 2–3 minutes per side until golden and crispy.
  6. Slice and serve with dipping sauces like guacamole or salsa.

Notes

Feel free to customize with additional veggies or different cheeses. Keep an eye on the cooking time to avoid burning.
