Zucchini Corn Fritter Sliders

Delicious zucchini and corn fritter sliders, perfect for casual dinners or summer barbecues.

Ingredients

  • 2 medium-sized Zucchini, grated
  • 1 cup Corn, fresh or frozen
  • ½ cup All-Purpose Flour
  • 1 large Egg
  • 2 stalks Green Onions, chopped
  • 1 teaspoon Garlic Powder
  • Salt and Pepper, to taste
  • Oil, for frying

Instructions

  1. Prep your zucchini by washing and grating it. Squeeze out excess moisture using a kitchen towel.
  2. Combine the zucchini, corn, chopped green onions, garlic powder, and egg in a mixing bowl.
  3. Add the flour gradually and stir until just combined without overmixing.
  4. Season with salt and pepper to taste.
  5. Heat about ¼ inch of oil in a skillet over medium heat.
  6. Fry the fritters, scooping a tablespoon of batter into the hot oil, and flatten slightly. Cook for 3-4 minutes on each side.
  7. Drain on a paper towel-lined plate to absorb excess oil.
  8. Assemble your sliders with fritters and toppings, using small burger buns or mini rolls.

Notes

You can bake these instead of frying by placing them on a lined baking sheet at 400°F for 15-20 minutes.
