  • 2 medium-sized Zucchini
  • ½ cup Granulated Sugar
  • 1 cup All-purpose Flour
  • 1 tsp Baking Powder
  • Pinch of Salt
  • 2 Eggs
  • ½ cup Milk
  • 1 tsp Vanilla Extract
  • Oil for frying
  • Powdered Sugar for dusting
  • Cinnamon (optional)

Instructions

  1. Wash the zucchini thoroughly. Cut off the ends and slice them into thin strips—about ¼ inch thick.
  2. Combine the dry ingredients for the funnel cake batter—flour, sugar, baking powder, and salt in a mixing bowl.
  3. Mix your wet ingredients—eggs, milk, and vanilla extract in a separate bowl. Pour this into the dry ingredients and stir until just combined.
  4. Heat about 2 inches of oil in a deep pan or pot over medium heat until it reaches around 350°F.
  5. Dip each zucchini strip into the funnel cake batter, ensuring it’s evenly coated.
  6. Fry the battered zucchini in the hot oil for about 2-3 minutes on each side, or until golden brown.
  7. Dust with powdered sugar while still warm for a sweet finish.

Notes

These fries are best enjoyed fresh but can be kept warm in a low oven if making a larger batch. Try serving with chocolate sauce or whipped cream for dipping!
