Zucchini Parmesan Tater Tots

A comforting twist on classic tater tots incorporating fresh zucchini and savory Parmesan cheese.

  • 2 medium Zucchini, grated
  • 1 cup Parmesan cheese, grated
  • 1 cup Breadcrumbs (regular or panko)
  • 2 Eggs
  • Salt and pepper to taste
  • Optional: garlic powder and dried herbs

Instructions

  1. Prep your zucchini by washing it thoroughly. Grate using a box grater or food processor and squeeze out excess moisture.
  2. Combine the grated zucchini, Parmesan cheese, breadcrumbs, and eggs in a large mixing bowl. Season with salt, pepper, and optional spices.
  3. Shape the mixture into bite-sized oval shapes and place them on a parchment-lined baking sheet.
  4. Bake in a preheated oven at 425°F (220°C) for 20–25 minutes, flipping halfway through.
  5. Enjoy warm, optionally with marinara sauce or lemon juice.

Notes

Squeeze out as much moisture from the zucchini as possible for crispy tots. Can be prepped ahead of time.
