Crispy Zucchini Pickle Fries

  • 2 medium Zucchini, cut into sticks
  • 2 tablespoons Dill Seasoning
  • 1 cup Breadcrumbs (plain or panko)
  • 1 Egg (or 1 flax egg for vegan option)
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the zucchini by washing, drying, and cutting them into sticks.
  3. Set up a dredging station with three shallow bowls: one for the egg mixture, one for breadcrumbs and dill, and one for additional spices.
  4. Dredge each zucchini stick in the egg, then coat it in the breadcrumb mixture.
  5. Bake the fries on a lined baking sheet for 20-25 minutes, flipping halfway through.
  6. Serve hot with your favorite dipping sauces.

Notes

To enhance the flavor, consider adding spices like garlic powder or cayenne to the breadcrumbs. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
