Refreshing Cucumber Ginger Lime Mocktail

A vibrant and refreshing mocktail combining the crispness of cucumbers, the zing of lime, and a hint of ginger, perfect for summer days.

  • 2 Cucumbers (skins removed)
  • 4 Cups Water
  • 1015 Sprigs Fresh Mint
  • 3 Inch Slice Fresh Ginger
  • 2 TBSP Honey
  • 2 Limes (juiced)
  • Splash of Club Soda (for each glass)
  • Ice (for each glass)

Instructions

  1. Prepare Your Cucumbers: Peel cucumbers and slice them into chunks.
  2. Blend the Magic: Toss the cucumber chunks into a blender with 4 cups of water and blend until smooth.
  3. Strain for Smoothness: Pour the blended mixture through a fine mesh strainer into a pitcher.
  4. Add the Ginger: Finely grate or chop ginger and stir into the cucumber juice.
  5. Mix in the Sweetness: Add honey and lime juice to the pitcher, stirring until honey dissolves.
  6. Mint It Up: Rip mint leaves and add them to the mix, giving a light stir.
  7. Taste Test: Adjust sweetness or zing according to your preference.
  8. Chill & Serve: Refrigerate for at least 30 minutes, then serve over ice and top with a splash of club soda.
  9. Garnish & Enjoy: Garnish each drink with a mint sprig or cucumber slices.

Notes

This mocktail can be made in advance; just add honey and lime juice before serving. Feel free to experiment with other herbs and fruits for different variations.
