Refreshing Cucumber Mint Cooler

A refreshing drink that captures the essence of summer with crisp cucumbers and fragrant mint.

  • 1 Salad Cucumber
  • 34 tbsp Sugar
  • 810 Mint Leaves
  • 3 tbsp Lemon Juice
  • 1 Pinch Himalayan Rock Salt
  • 3 cups Water
  • Ice Cubes (to serve)
  • Cucumber Rings and Mint Leaves for Garnishing

Instructions

  1. Prep your ingredients: Rinse the salad cucumber under cool water, slice off the ends, and cut it into quarters lengthwise.
  2. Muddle: In a large mixing bowl, toss in the mint leaves and sugar, then gently muddle together to release the mint oils.
  3. Add the quartered cucumber and lightly crush it with the mint and sugar mixture to extract juices.
  4. Squeeze the lemon: Measure and pour in 3 tablespoons of freshly squeezed lemon juice.
  5. Mix with water: Pour in 3 cups of water and stir until the sugar is fully dissolved.
  6. Chill out: Refrigerate the mixture for about 30 minutes to an hour to meld the flavors.
  7. Serve it up: Fill glasses with ice cubes, pour in the cooler, and garnish with cucumber rings and mint leaves.

Notes

Adjust sweetness with more or less sugar according to your taste. For a fizzy drink, use sparkling water instead of still.
