Cucumber Mint Lemonade

A refreshing drink that combines the zing of fresh lemons, the coolness of cucumber, and the aromatic notes of mint—perfect for summer gatherings!

Ingredients

  • ½ cup Cucumber Juice (from 1 English Cucumber)
  • ½ cup Lemon Juice (from fresh lemons)
  • ⅓ cup Honey
  • 4 cups Water
  • 1 Lemon, sliced
  • 2 Persian Cucumbers, sliced
  • 2 bunches Mint Sprigs, fresh
  • Ice to serve

Instructions

  1. Juice the Cucumbers: Wash the cucumber, cut it in half, and scoop out the seeds. Process to make ½ cup of juice, strain if needed.
  2. Squeeze Those Lemons: Roll lemons, cut, and extract ½ cup of lemon juice avoiding seeds.
  3. Mixing Magic: Combine cucumber juice, lemon juice, and honey in a pitcher and stir until dissolved.
  4. Add Water: Pour in 4 cups of cold water and stir well.
  5. Minty Freshness: Slap the mint sprigs to release oils and add them to the pitcher.
  6. Final Touches: Add lemon and cucumber slices, stir, and refrigerate for at least 30 minutes.
  7. Serve Up Some Joy: Fill glasses with ice, pour lemonade, and garnish with mint or lemon slices.

Notes

For a sparkling version, substitute half of the water with sparkling water. Adjust sweetness according to taste.
