Creamy Dairy-Free Chicken Alfredo

A comforting and creamy dairy-free version of the classic Chicken Alfredo, featuring gluten-free farfalle, chicken, and spinach.

  • 1 1/4 lbs Chicken breast (diced small)
  • 1 3/4 tsp sweet smoked paprika
  • 1 1/2 tsp oregano
  • 1 1/2 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten-free farfalle
  • 4 tbsp dairy-free butter
  • 2 tbsp minced onion
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups chicken broth
  • 1 2/3 tbsp gluten-free 1:1 flour
  • 2 cups dairy-free heavy cream
  • 2 cups chopped spinach
  • 8 oz dairy-free parmesan (shredded)
  • 2 tbsp pasta water (as needed)

Instructions

  1. Cook the pasta in salted water until al dente, reserving a cup of pasta water before draining.
  2. Sauté the chicken with spices in a skillet until golden brown and cooked through, about 6-8 minutes.
  3. Add minced onions and garlic to the skillet; sauté until translucent.
  4. Create the sauce by adding gluten-free flour and chicken broth, stirring until thickened.
  5. Incorporate dairy-free cream, simmering until the sauce is creamy.
  6. Mix in chopped spinach and dairy-free parmesan until well combined.
  7. Combine the pasta with the sauce, adjusting seasoning as needed.
  8. Serve garnished with extra dairy-free parmesan and black pepper.

Notes

For a vegan version, substitute chicken with plant-based alternatives and ensure dairy-free products are vegan-friendly.
