Easy Chickpea Salad

A vibrant and nourishing chickpea salad packed with fresh vegetables and a zesty dressing, perfect for a light lunch or as a side dish.

Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare your workstation with a large mixing bowl, cutting board, and knife.
  2. Open your can of chickpeas, drain and rinse under cold water.
  3. Dice the cucumber, bell pepper, and red onion into evenly sized pieces.
  4. Halve the cherry tomatoes carefully.
  5. Gather the chickpeas, cucumber, bell pepper, cherry tomatoes, and red onion in a large bowl.
  6. Add the chopped parsley and mix well.
  7. Drizzle the olive oil and lemon juice over the salad, then season with salt and pepper.
  8. Mix everything together gently to combine.
  9. Chill in the fridge for about 30 minutes (optional).

Notes

This salad tastes better after a few hours as the flavors meld together. It can also be made a day in advance.
