Homemade Glazed Donuts

  • 1/4 cup bread flour
  • 3 cups + 2 tablespoons bread flour
  • 1/3 cup granulated sugar
  • 1 tablespoon instant yeast
  • 1 1/4 teaspoon fine sea salt
  • 1/2 cup whole milk (room temperature)
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 5 tablespoons unsalted butter (room temperature)
  • Neutral oil, for frying
  • 3 1/2 cups powdered sugar
  • 1/3 cup + 1 tablespoon hot water
  • 1 teaspoon vanilla paste or extract
  • Pinch of fine sea salt

Instructions

  1. Prepare the Dough: Start by combining the water, milk, and butter in a mixing bowl. Whisk them together until the butter has mostly melted.
  2. Mix the Dry Ingredients: In another bowl, whisk together the bread flour, sugar, salt, and instant yeast.
  3. Combine: Gradually add the wet ingredients to the dry ingredients. Mix until you have a shaggy dough.
  4. Knead It: Turn the dough out onto a lightly floured surface. Knead for about 8-10 minutes, until the dough becomes smooth and elastic.
  5. First Rise: Transfer your dough into a lightly greased bowl. Cover with a damp cloth and let it rise in a warm place for about 1-2 hours.
  6. Shape the Donuts: Gently punch down the dough and roll it out to about 1/2-inch thickness. Cut out your donuts with a donut cutter.
  7. Second Rise: Place your cut donuts on a lightly floured baking sheet, cover, and let them rise again for about 30-45 minutes.
  8. Fry Time: Heat your neutral oil over medium heat. Fry the donuts for about 1-2 minutes on each side until golden brown.
  9. Glaze While Hot: Mix the powdered sugar, hot water, vanilla, and a pinch of salt in a bowl. Whisk until smooth and dip warm donuts in glaze.
  10. Set and Enjoy: Place the glazed donuts on a cooling rack and let the glaze set for a few minutes.

Notes

Serve with coffee or milk. Frying can be tricky; ensure your oil is hot enough for a crispy texture.
