Ingredients

Scale
  • 4 Chicken Breasts
  • 2 Cups Rice
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Bell Pepper, Chopped
  • 4 Cups Chicken Broth
  • 1 Teaspoon Paprika
  • Salt and Pepper to Taste
  • Olive Oil

Instructions

  1. Prepare the Ingredients: Gather all your ingredients, chop the onion, bell pepper, and garlic, and set them aside.
  2. Sauté the Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and bell pepper, cooking for 5-7 minutes until softened. Add minced garlic and sauté for an additional 30 seconds.
  3. Brown the Chicken: Add chicken breasts to the pot, searing for 2-3 minutes on each side until golden. Remove chicken and set aside.
  4. Add Rice and Broth: Stir in uncooked rice, pour in chicken broth, and sprinkle paprika, salt, and pepper. Nestle the chicken back into the mixture.
  5. Bring It All Together: Bring to a gentle boil, cover, and reduce heat to low. Simmer for 20-25 minutes, or 30-35 minutes if using brown rice.
  6. Finish with Freshness: Check chicken for doneness. Once cooked through, let the chicken rest, fluff rice, and garnish with fresh herbs if desired.
