Strawberry Cake Mix Chocolate Chip Cookies

  • 1 box of strawberry cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup mini chocolate chips
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven: Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheet: Line your baking tray with parchment paper or a silicone baking mat.
  3. Mix the wet ingredients: In a large mixing bowl, combine the vegetable oil and eggs. Whisk them together until well mixed.
  4. Add the cake mix: Gradually add in the box of strawberry cake mix to your wet mixture.
  5. Fold in the chocolate chips: Gently fold in the mini chocolate chips.
  6. Scoop the dough: Using a cookie scoop or tablespoon, drop mounds of dough onto your prepared baking sheet.
  7. Bake: Pop the tray into the preheated oven and bake for 10-12 minutes.
  8. Cool down: Let your cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  9. Dust with powdered sugar: If desired, dust your cookies with powdered sugar while they’re still warm.

Notes

Store cookies in an airtight container for up to a week. Dough can be frozen for up to 3 months.
